Veggie Hamburger Helper
The recipe is for 2lbs of ground beef
I used ALL ORGANIC veggies and beef
½ of large yellow onion
2 large carrots
2 stalks of celery
6-8 mini cremini mushrooms
3-5 large cloves of garlic
Optional: Fresh parsley, Oregano, and or Thyme
Cut into chunks and blend in a food processor until veggies are almost mush.
Add veggie mixture to pan with 1 TBL of organic butter or EVOO. Season with Himalayan salt, pepper, and spices of choice. Cook on medium-high heat until it starts to brown the bottom of the pan.
Add 2 lbs. of ground beef. Season with spices again. Cook until done
This amount of ground beef can be split into many different meals. Since I cook for only 2, I like to freeze about one-third of this amount.
I use this to make my meat sauce for spaghetti, to make chili, and to make vegetable beef soup. I warm the meat with salsa and use it for tacos or tortilla roll-ups. I also warm it and add it to salads. I sprinkle on store-bought cheese pizza along with extra veggies. The possibilities are endless.
