RAW BUTTERNUT SQUASH SOUP

One large butternut squash, diced

One large butternut squash, diced

1 large butternut squash, diced ( approx. 2 ½ cups)

¼ cup cold pressed extra virgin olive oil

¼ cup pine nuts

1 sprig fresh rosemary

2-4 sage leaves

½ Roma tomato

¼ small yellow onion

¼ medium organic apple

1 clove garlic

2 T. pure maple syrup

Salt and pepper

2 cups hot water

Blend in Vitamix blender starting on variable and then high.  Blend on high for 2-3 minutes until steam forms in the lid.

No nutrition is lost because the soup is not actually “cooked”.

You will be amazed at how easy this soup is to make and how well it is received by your family.  A one cup serving is very filling. This makes approximately 4 cups.

Use a crock pot or slow cooker to reheat to maintain as much nutrition as possible.
