1 cup coconut milk
1 large or 2 small bananas
1/2 tsp. cinnamon
1/2 tsp. Himalayan salt
Cream together in a high-capacity blender or food processor. My experience is my Vitamix is much better at creating a creamy texture versus a food processor. Add:
2 cups raw cashews (soaked for at least 6 hours, drained, and rinsed)
1/2 cup raw cacao powder
1 medium or 2 small zucchini (peeled and cut into chunks)
Optional but recommended:
2 Tbl. plain collagen powder and/or 1 Tbl chia seeds
Drizzle real maple syrup for extra sweetness if needed.
BLEND UNTIL CREAMY
Refrigerate until set for 1-2 hours. This recipe makes approximately 4 cups. I like to freeze at least half of the recipe. This recipe is also great for fudgesicles and Raw Chocolate Pie.
