CUCUMBER WATERMELON SALAD

Another end of the summer favorite!

3 cups watermelon chunks
2 cups thinly sliced cucumber
¼ cup chopped green onion
2 Tbsp extra-virgin olive oil
1 Tbsp white balsamic vinegar
3 Tbsp torn basil, divided
1 tsp kosher salt
¼ tsp black pepper
1 cup goat feta cheese

Mix all ingredients in a bowl except 1 Tbsp. basil and feta cheese.  Sprinkle basil and cheese on top just before serving.
