Creamy Oregano Dressing

1 cup soaked raw cashews
1/4 cup filtered water
Juice and zest from one small lemon
2 T. Apple Cider Vinegar
1 T. raw pumpkin seeds (soaked)
2 large or 3 small cloves of garlic
1 green onion or 2 T. chopped
3 T. nutritional yeast
3 T. EVOO (extra virgin olive oil)
½ T. bee pollen
½ T. date paste (or raw honey or real maple syrup)
½ bunch of oregano leaves
Pepper & Himalayan salt to taste

Blend until smooth.

Cashews, pumpkin seeds, bee pollen and dates all have substantial protein profiles. While the other ingredients contain the additional vitamins and minerals needed to easily utilize the protein. This dressing eliminates the need for additional animal protein in your salad.
