This veggie burger is quite tasty! Despite being cooked and therefore void of some of the great nutrients available if consumed raw; this is an excellent alternative to a beef burger. This burger with lettuce, tomato (heirloom tomato season is a great motivator for me) cashew cheese sauce and raw ranch dressing is QUITE NUTRITIOUS! We ate it on Ezekiel bread and experienced NO DIGESTIVE UPHEAVAL!
Serves: 6-8
Ingredients
1 BPA free can chickpeas, drained, well-rinsed, and mashed
3 green onions chopped or ½ red onion, finely diced
1 small zucchini, grated
3 T. finely chopped cilantro
3 T. apple cider vinegar or red wine vinegar
1 T. siracha sauce
2 T. organic black tahini, regular tahini or almond butter
1 tsp cumin
1 tsp garlic powder
2 tsp black pepper
½ tsp Himalayan sea salt
1 cup organic quick oats
2 T. olive oil
Instructions
After draining and rinsing the chickpeas, place them in a bowl and mash them with a fork or pastry knife.
Add all the other ingredients to the bowl.
Use your hands to mix very well.
Form into 6-8 patties.
Cook on the BBQ around 400 F for approximately 10 minutes each side.
You can also fry these in a pan with some coconut oil for 3-5 minutes a side.
