1 ½ cups soaked raw cashews
2 T. ACV (Bragg’s apple cider vinegar)
Zest and juice from one small lemon or 1/2 a large
1/4 cup EVOO
1 tsp. Himalayan Salt
2-3 cloves of minced garlic
1 chopped green onion
1 cup fresh dill
3 T. fresh basil
3 T. raw green pumpkin seeds
Blend until incorporated. Refrigerate in covered glass container. Dressing will firm up in the refrigerator. Dilute with ACV and EVOO to serve.
To make 1-2 serving dressing:
1-2 T. of prepared refrigerated dressing
1 -2 T. of Braggs ACV
1-2 T. EVOO (extra virgin olive oil)
In a small bowl, stir all ingredients together and drizzle over salad.
