2 cups raw buckwheat groats – soak in filtered water for 90 minutes, drain and rinse. I also like to dry in my dehydrator for a few hours for texture. Reserve 1/2 cup of prepared groats to add it after blending other ingredients in blender.
2 cups almond milk
1 tsp. cinnamon
¼ tsp. nutmeg
½ tsp. Himalayan salt
2 T. black strap molasses
4 T. chia seeds
1/4 cup prepared pumpkin seeds ( raw seeds that have been soaked at least 6 hours, rinsed and drained. I also like to dehydrate for several hours until crunchy.)
In your blender process milk, spices, 1 1/2 cup of groats and molasses until smooth. Pour mixture into a bowl and stir in chia seeds, ½ cup of reserved buckwheat and pumpkin seeds. Stir vigorously to activate chia seeds. Refrigerate in a covered glass container up to 3-4 days.
To serve, spoon 2-3 heaping tablespoons of groats into a small bowl. Add fruit and nuts. Enjoy!
