Overnight Buckwheat Breakfast

1 cup almond milk

2 cups raw buckwheat groats (soak in filtered water for 90 minutes)

2 T. chia seeds

1 tsp. cinnamon

¼ tsp. nutmeg

½ tsp. Himalayan salt

2 T. black strap molasses

Rinse buckwheat groats in cold water and drain.  They will swell to approximately 2 ½ cups.  For a chewier texture reserve ½ cup of the groats to add in by hand.  Process all other ingredients in a food processor or blender until smooth.  Stir in ½ cup of reserved buckwheat. Refrigerate in a covered glass container up to 3-4 days.

To serve, spoon 2-3 heaping tablespoons of groats into a small bowl.  Add fruit and nuts.  Enjoy!
