Cucumber Dill Dressing

Cucumber Dill Dressing

2 cups chopped cucumber
1 cup soaked raw cashews
Juice and zest of a medium lemon
3 Tbl. Apple Cider Vinegar (Braggs or organic non-filtered)
¼ cup EVOO
One pack of fresh dill, de stemmed
4-6 crushed garlic cloves
2 large green onions
2 Tbl. nutritional yeast (optional – tastes like cheese)
½ Tbl. bee pollen (optional – slightly sweet and adds easy protein)
Himalayan salt and pepper to taste

Add all ingredients to a high powered blender or food processor. Reserve half of the dill. Blend until creamy. Add remaining dill at your discretion and to your taste. Pulse until blended.

This is a great recipe for clients with kidney challenges! This includes anyone with high blood pressure or anyone that likes to eat animal protein on a regular basis.

Dill Weed provides Calcium, Copper, Iron, Folate, Magnesium, Manganese, Niacin, Phosphorus, Potassium, Riboflavin, Vitamin A, Vitamin B6, Vitamin C, and Zinc. Dill is a natural food that protects against cancer-causing agents and free radicals. Dill is also anti-bacterial and protects against bone loss.

Cashews are one of the most concentrated food sources for Zinc. They are also rich in the beautifying oleic fatty acids.

Cucumbers are known as one the best natural kidney cleansers. They are rich in B vitamins and are highly rehydrating. They are known to improve diabetes, bad breath, joint and arthritis pain and gout.

Garlic is known as a sulfur residue food that cleanses tissues and aids in oxygenation. Garlic is a natural antimicrobial by nature and therefore a known immune booster. Research also indicates that garlic diminishes a process that creates cancer-causing compounds in your body.

Onion is a powerful anti-septic that is rich in vitamins A, B and C. It is a potent source of folate, calcium, phosphorus, magnesium, chromium, iron and dietary fiber.

Apple Cider Vinegar is a completely natural product & is rich in enzymes and potassium, will help to build a healthy immune system, control weight, aid in digestion and support a healthy pH balance. It is good for soothing sore throats and removing toxins from the body.

One ounce of nutritional yeast contains 14 grams of protein. Nutritional yeast is an excellent source of almost all B complex vitamins.
