SALAD IN A JAR

When life gives you “CRAZY” make Salad in a Jar.  Doing this one thing has saved me and my diet many times, especially when traveling.

It is so easy! 

These particular pictures have my Pumpkin seed basil pesto on the bottom as a dressing. Another favorite is the ranch dressing.

On top of the dressing I layered chopped carrots, peppers, celery, tomatoes, cucumbers, peas and hemp seed. I follow that with chopped lettuce and about 1/4 cup of fermented cabbage to top and it’s ready to go.

I have learned to use larger jars and not pack to the top. This allows you to gently shake the jars to distribute dressing. Also equally important is a long enough fork!

Variations:

Use this Asian inspired dressing.

On top of the dressing layer peas, spiralized zucchini, shredded carrots, chopped red pepper and shitake mushrooms.
