The nutrient values in this snack are almost beyond compare. I originally formulated this snack for clients with digestive issues like parasites, acidity, poor protein absorption and inability to gain weight.
Ingredients:
½ sour or granny smith organic apple
Zest from one orange
Juice from half of an orange
Juice from half of a lemon
¼ cup organic or local raw honey
¼ cup raw tahini
Blend all ingredients in a blender and poor over the following nut/fruit mixture
In a bowl:
2 cups soaked pecans
½ chopped granny smith apple
¼ cup goji berries
½ cup soaked raw pumpkin seeds
1 cup soaked raw cashews
Mix with blended ingredients and spread on a paraflex sheet. Dehydrate on 125 for 1-2 hours.
*To make a granola dehydrate on 115 for 4-6 hours. Remove tray from dehydrator. Stack another tray with screen only, on top of granola and flip over. Remove paraflex sheet and return to dehydrator for another 6-8 hours or until the desired crunchiness.
To continue to make NUT CLUSTERS:
Break-up into a bowl and add:
1 bag Mesquite Maple Walnuts (Living Intentions “Go Nuts” sold on line) or add chopped plain walnuts or almonds.
½ cup of date caramel dip
Coat mixture with the caramel dip.
Scoop tsp. size cluster on to dehydrator screens and dehydrate another 5-7 hours.
